The forward of the book, which is reproduced from the 1993 book, Top Secret Recipes, lays a disclaimer for variances in the recipes. Many of the ingredients used in these company’s special brands are actually top secret combinations of specialized ingredients and are closely guarded. For example, Mrs. Fields uses vanilla that is manufactures from vanilla bean plants from all around the world, to have a specific taste. For that reason, taste may not be completely identical, but very close.
Creating Top Secret Recipes
Todd Wilbur chooses the recipes for cloning based on email requests from fans that he receives on his website. Determining the ingredients requires discerning taste buds and lots of trial and error, which gets very expensive. Sometimes, he is fortunate enough to make his way into the kitchen to witness the creative culinary process, but that is a rarity.
More often, products are purchased, analyzed, and recreated. Wilbur uses a willing panel of family and friends to be his taste testers, after he has had a chance to sample the creations. Whenever perceived success is attained, it is tested once more against the original, and tweaked if necessary.
